HOW CAN WE KNOW THAT PETER WASN'T THE 1ST POPE and that the CHRISTIAN CONGREGATION?

Pope just means father. The office of Pope is really Bishop of Rome. Peter was an Apostle. He would have appointed Bishops to have authority over a city or region. It was several centuries after Peter that the Bishop of Rome claimed seniority over other bishops. So did the leaders of the Eastern church.
